The Quarter Beef includes a few types of cuts like flank steak or brisket and stew meat and short ribs. Its a great value that gives you all the beef standards like steaks, roasts and our 85% lean ground beef but also gives you some of the best kept secret cuts like flank steaks, brisket and short ribs. While the hanging weight is different for each animal, the hanging weight for Quarter Beef is in the 110-140 pound range.

1-arm Roast (3-4lbs each)
1- Rump Roast (3-4lbs each)
3-Chuck Roast (3-4lbs each)
6-7 Ribeye Steaks, Bone in (1" thick, 2 per package)

4-5  Round Steaks
4-5 Sirloin Steaks (3/4", 1-2 per package)
